Hibachi Style Japanese Fried Rice with Smoky Baked Tofu

Ingredients

For the Smoky Baked Tofu

  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon liquid smoke
  • 7 ounces extra firm tofu, (half of a 14-ounce package) drained, pressed, and cut into ½ inch cubes

For the Japanese Fried Rice

  • 3 tablespoons soy sauce
  • 2 tablespoons sake (optional, but highly recommended for flavor)
  • ½ teaspoon white pepper
  • 2 tablespoons vegan butter
  • 1 small onion, cut in half, then thinly sliced
  • 1 large carrot, diced
  • 2 garlic cloves, minced
  • 4 cups leftover cooked rice, chilled
  • ½ cup frozen peas, thawed

Apple Crumb Coffee Cake Recipe

Ingredients:

Cake Batter

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ cup salted butter softened at room temperature
  • 1 ¼ cup sugar
  • 3 eggs room temperature
  • 1 tablespoon vanilla
  • ½ cup sour cream
  • 4 cups chopped apples peeled
  • ¼ cup brown sugar
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon

Crumb Topping

  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup salted butter melted

 

Instructions:

  • 3 + 1 Tbsp. Unsalted Butter
  • 1/2 Tbsp. Pepperoncini In Oil
  • Drizzle EVOO
  • 3 cloves Garlic, crushed & minced
  • 1 Sprig Fresh Rosemary
  • Few Sprigs Fresh Thyme
  • 1 Shallot, halved & sliced
  • 227g Button Cremini Mushrooms, cleaned well
  • 2/3 C White Wine ( I used Pinot)
  • 1/4 C PC Brand Plant-Based Chik'n Broth
  • 2 Tbsp. Fresh Parsley, chopped
  • Himalayan Salt & Cracked Pepper
  • OPTIONAL - Grilled Bread / Crostini

  • ​Begin heating the EVOO, pepperoncini, 3 Tbsp. butter, garlic, rosemary, and thyme, in a 10" skillet set to just about medium heat.   • 1 medium bell pepper diced
  • 8 oz. ham steak diced
  • 2 cups shredded cheddar or other cheese

Egg Mixture

  • 8 eggs
  • 1/2 cup milk
  • 1/8 tsp. ground mustard the spice, not the condiment
  • 1/4 tsp. dried thyme rolled between your hands
  • 1/4 tsp. onion powder
  • 1/4 tsp. paprika
  • 1 tsp. sea salt
  • 1/4 tsp. pepper

  • 2 pounds chicken wingettes
  • ¼ cup ketchup
  • ¼ cup water
  • cup low-sodium soy sauce
  • ¼ cup honey
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon sesame oil
  • 3 garlic cloves minced
  • 1 tablespoon sliced green onions for garnish
  • 2 teaspoons sesame seeds for garnish
