Lebanese Lemon Garlic Chicken

Ingredients:

  • 500g/ 1lb chicken tenderloin (or breast), cut into 4cm / 1.5" squares, large vein cut out (Note 1)

Lemon garlic marinade:

  • 4 tbsp Greek or plain yogurt
  • 3 tbsp lemon juice
  • 1 tbsp garlic , finely grated or crushed using garlic press (~4 big cloves)
  • 1 tbsp olive oil
  • 1 tsp cooking salt / kosher salt (1/2 tsp table salt, 1 1/4 tsp flakes)

  • 1 cup Greek or plain yogurt

Rosemary and Bacon Chicken

Ingredients:

 

  • olive oil, for frying
  • 250 g smoked back bacon, excess fat removed and diced
  • 8 free-range, bone-in chicken thighs, skinless
  • 1 large white onion, finely diced
  • 1 garlic clove, minced
  • 2 stems fresh rosemary, leaves picked and finely chopped
  • 5 ml (1 teaspoon) dried oregano
  • 80 ml ( 1/3 cup) white wine
  • 325 ml (1 1/3 cup) chicken stock

Sticky Strawberry Barbecue Hot Wings

Ingredients:

  • 2-3 pound chicken wings (separated from wing tip)
  • 1/2 tbsp sea salt
  • 1 tsp paprika
  • 1 tsp all purpose poultry seasoning
  • non-stick cooking spray
  • Sauce
  • 1 1/2 cup barbecue sauce
  • 1/2 cup strawberry preserves
  • 1/8 -1/4 cup hot sauce (according to taste)

Instructions:

  1. Preheat oven to 375 degrees F
  2. Rinse and then dry wings thoroughly
  3. Season with salt, paprika and poultry seasoning
  4. Spray both sides of chicken wings with non-stick cooking spray
  5. Bake for one hour turning half way in between.
  6. Finish under the broiler (on high) for an additional 5 minutes.

Honey Garlic Chicken Wings

Ingredients:

  • 2 pounds chicken wingettes
  • ¼ cup ketchup
  • ¼ cup water
  • cup low-sodium soy sauce
  • ¼ cup honey
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon sesame oil
  • 3 garlic cloves minced
  • 1 tablespoon sliced green onions for garnish
  • 2 teaspoons sesame seeds for garnish

Instructions:

  • Preheat the oven to 400°F.
  • Place the chicken wings in a 9x13 baking dish and spread them out evenly. Set aside.
  • Mix the sauce: Combine ketchup, water, soy sauce, honey, rice vinegar, sesame oil, and minced garlic in a small pot. Stir well to combine. No need to heat it yet.
